Dinner tonight was eggplant stew. It has these ingredients:
1 T chopped garlic
2 cans tomato sauce
salt and pepper to taste
Peel the eggplant and slice into 1/4-inch thick rounds.
Put all ingredients into a crockpot, pressure cooker, or pan on the stove over low heat and cook until the eggplant begins to fall apart when you stir it. Eat it by itself, with toasty bread, or over steamed rice.
