Tonight was a quick night for me, so I cooked long green beans, bok choy, and spinach in my wok with a little water.  After it cooked like this, I sliced a few mushrooms into it, grated fresh ginger, added chopped garlic, and poured a tablespoon or so of soy sauce on it.  I ate my greens with freshly shredded hash browns.  Yummy and satisfying meal.

I should note that my teenagers were all away for the evening, or I would have had to cook something to go with this that they would eat.  I am still having a hard time getting two of them to eat a meal with so many green veggies in it.
